With the help of @gozney I have deffo upped my home pizza game. The fluffy crust and nice char you are able to get on each pizza is mind blowing. Now I’m deffo not perfect at making pizzas but the roccbox is almost like my little hack on the road to pizza perfection. I use a classic dough recipe, with yeast cba for that sourdough starter, the sauce is good qual italian tomatoes just with olive oil, salt and oregano. Dough recipe / 4 small pizzas 500g 00 flour 300g water 2g instant yeast 12g salt 1. Mix flour and water and leavr for autolysis for around 2 hours 2. Add dough to a stand mixer with yeast and knead on low for 5 mins 3. Add salt and need for 5 mins more 4. Add to an oiled dish and stretch and fold the dough every 30 mins for 90-2hours 5. Split the dough in 4 and allow to rest in the fridge for 24 hours 6. Remove the dough 30 before using dust with flour and shape into a pizza 7.
