Strawberry & cardamom pie ππ

Ingredients for a 24cm pie
Pie crust (you'll need 2x)
310g (2 1/2 cups) all-purpose flour, plus more for rollingβ¨50g (1/4 cup) granulated sugar
1/4 tsp sea salt
1/2 tsp ground cardamom
225g (1 cup)cold unsalted butter, cubed
5-7 tbsp ice water ( 75-100 ml)
Egg wash
For Vegan, replace butter with vegan butter (stick) and egg wash with plant milk.
Cut cold butter into cubes and place in the freezer until you're ready to use it.
I use a food processor to make the dough, but it can be made by hand.
Add flour, sugar and salt to the bowl of a food processor. Pulse a few times to combine..l
Add cubed butter and pulse a few times until crumbly. Add ice water, 1 Tbsp at a time and blend until the dough comes together.
Do not knead. Wrap into plastic and refrigerate for at least 1h.
Remove chilled crust from fridge and let it warm up on the counter for a few minutes. Roll out pie crust to 6mm (1/4 "inch) and transfer to pie pan.
Cut second dough into strips for the lattice crust.
Refrigerate until ready to use.
Filling
750g strawberries , fresh or frozen*
2 tbsp lemon zest
2 tbsp fresh lemon juice
200g (1 cup) light brown sugar
1/2 tsp ground cardamom
1 tsp vanilla bean paste
30g (1/4cup) corn starch
*be sure to thaw the frozen strawberries completely before using them.
In a large pot combine strawberries, lemon juice, lemon zest, and vanilla.
Whisk sugar and corn starch together and add to the strawberries. Stir to combine.
Let macerate for 30 minutes.
Heat over medium heat until the strawberries are soft and the liquid looks saucy. Add vanilla and cardamom.
Let cool down completely before filling the pie crust.
To make the lattice crust, roll out the second pie crust and cut into equal strips. Place them into a lattice pattern over the prepared pie.
Preheat oven to 200C degree with a baking tray.
Place the pie over the hot tray and bake for 15 minutes. Reduce temperature to 175C and bake for another 40 minutes. Cover with foil if the crust darkens too much.
Let cool down completely and enjoy!
