AD- @ardbeg - Christmas Whisky marmalade glazed ham

This is an easy glaze for a Christmas ham that brings out the flavours of the ham with rich sweetness of the marmalade. Adding the peaty flavours of the whisky embellishes the whisky and compliments the sweet ham. A true hero of your Christmas feast.
This is just the thing Paddington would wake up to while hung over and realising winnie the poo was next to him, passed out, spooning Baloo in his Queen sized bed.
Ingredients
For the ham pot
1 x 3kg ham, rind on
4 x bay leaves
1 x orange, halved
1 x lemon, halved
1 x onion, peeled and halved
1 x garlic bulb, halved
1 tbsp black peppercorns
1 tbsp coriander seeds
Finishing the Ham
2 tbsp whole cloves
1 whole orange, sliced into rounds
200g orange marmalade
2 tbsp wholegrain mustard
2 tbsp frenchies mustard
A good drizzle or ardbeg An Oa
A furth drizzle of Ardbeg An Oa for flaming
Method
Setup - Deathstar technique ( heat canyon ) ( two small coal beds at each side of the grill )
Slowly simmer the ham along with the rest of the ham pot ingredients in a large pot with enough water to cover it until the middle reached 65C. Remove and rain on a tray. Carefully remove the rind while still warm.
Stud the ham with the cloves and layer on the orange slices. Heat through the marmalade, mustards and Ardbeg An Oa in a small sauce pan and boil for 2-3 minutes. Once slightly reduced, pour a little over the ham and roast the ham witht he lid on at 220C for 10 minutes, glaze again and repeat 2 more times with 10 minute gaps in between. After all the glaze has run out, finish off by pouring one last glug of Ardbeg An Oa over the glaze ham and stand back as the Whisky flames up and crystalises the glaze. Remove the ham onto a board and slice with a large slicing knife. Enjoy with a Wee dram. #ad #ardbeg #whisky
