In case you need an idea for what to do with a couple lemons and a touch of sugar 🍋
FOR THE SHORTBREAD CRUST:
1 cup unsalted butter, melted
1/2 cup granulated sugar
2 teaspoons pure vanilla extract
1/2 teaspoon salt
2 cups + 2 Tablespoons all-purpose flour (spoon & leveled)
FOR LEMON FILLING:
2 cups granulated sugar
6 Tablespoons all-purpose flour
6 large eggs
1 cup lemon juice (about 4 Good Land lemons )
Optional: confectioners’ sugar for dusting and passion fruit for an extra zing!
Preheat the oven 325 degrees. Mix the crust ingredients and press an even layer into a 9 x 13 in pan. Bake for 20 minutes. For the lemon layer: Sift the flour and sugar together then mix in the rest of the ingredients. Stir in the lemon juice and pour into the pan. Bake for 20, let it cool and stick it in the fridge to set!
TIPS:
🌟Let the cooked bars sit in room temp for an hour before leaving them in the fridge for up to two
🌟Poke holes in the shortbread before the filling.
