🍑Microwave Peach Sponge Pudding🍑 Got a tin of peaches lurking in the back of the cupboard? This makes a fantastic family pudding when you suddenly decide you want to make a dessert and you haven’t got much in in the way of ingredients. A tin of fruit, butter, flour, eggs, sugar and vanilla and you are sorted! It’s so delicious too ☺️🍑 #peachy Peach Sponge Pudding To serve 4-5 Ingredients 415g tin sliced peaches in juice 1 tbsp caster sugar 120g softened butter 120g caster sugar 2 large eggs 1 tsp vanilla extract 120g self raising flour 3 tbsp of the tinned peach juice Method 1. Grease a microwaveable bowl. 1.5pints/750ml or next size up. Scoop the peaches out of the tin or drain but save the juice. Line the bottom of the bowl with a layer of peaches, roughly 2/3 of them and rough chop the rest and save for later. Sprinkle the 1 tbsp sugar over the peaches in the pudding bowl. Set all this aside and make the sponge batter. 2. Beat the butter and sugar together til light and fluffy in a mixing bowl, add the vanilla extract, then beat in the eggs, one at a time. Add the flour and fold through, then fold in the 3 tbsp peach juice. Then mix through the rough chopped peach pieces. 3. Spoon the sponge batter onto the peaches in the pudding bowl and level it off, then cover tightly with clingfilm. Microwave on high for 7 minutes.
