What is the Deep Fried Rarebit? Conceptually it is the child of the bar at St. JOHN Smithfield, but architecturally its ancestry is Swiss: the Malakoff, a croquette with a bread base underpinning the rich cheese roux. It creates its own structural crust as it fries, negating the need for breadcrumbs. A generous shake of Worcestershire sauce is not Swiss at all, nor is the Guinness and the Cayenne within, nor the healthy spoonful of English Mustard which roots it to the plate and lifts the palate.
