🎄 Christmas Egg Custard Tarts 🎄... basically my new favourite tart. Short sweet pastry... I used @michaeljamesbakes from ‘The Tivoli Road Baker’, and layer of mince meat topped with egg custard. I won’t tell you how many I’ve scoffed already 🙈

Christmas Egg Custard Tarts
Makes 24 as shown
Ingredients
500g chilled and well rested sweet pastry (I used Michael James recipe for The Tivoli Road Baker)
Approx 100g mincemeat
For the custard
150ml double cream
150ml whole milk
2 large eggs
75g caster sugar
1/2 vanilla bean paste (extract is fine if none available)
A little grated nutmeg
Method
1. Lightly grease and flour your tart cases. Then lightly flour your kitchen top and rolling pin and roll out the pastry so it’s an even 4mm thick. Cut discs out approx 2cm wider than your tart cases and then press it into the case. If it’s a little stiff warm it in the palm of your hands for a few seconds. Cut off the excess with a knife then put approx five baking beads on the bottom and repeat with the rest of your cases. You may have to bake in a couple of batches.
2. Preheat fan oven to 160degrees Celsius and blind bake for 10 mins. While they’re in the oven put the cream, milk, nutmeg and vanilla in a saucepan and gently bring to the boil. Beat the eggs and sugar together in another saucepan or a mixing bowl off the heat and then whisk in the hot milk. Scoop off and discard any bubbles and cover until needed.
3. Remove from from the oven, then remove the baking beads, and tap the bottoms so the pasty releases but leave in the cases. Press approx 3/4 of a tsp of mincemeat in the bottom and then top up to the top with the custard mixture. When all done, bake at the same temperature for 15 mins. (If your tart cases are bigger they may need a few more mins)
4. Repeat if cooking in batches if not, tap the bottom of the tart cases and the edges on the kitchen top and give it a shake with your hand cupping the top and the tarts should release quite easily. Enjoy hot or cold! 😁
