Back to school blackberry and apple overnight oats - Save the recipe!!!💥💥💥 Made the night before, these overnight oats are a great way to start the day as they don’t feel too heavy and can be ladled into old jar jars and taken into work. Soaking them overnight unlocks the nutrients by making them easier to digest. My children lap them up and anything to get them away from sugary breakfast cereals is a bonus. It makes a fresh but sustaining start to the day. Find interesting varieties of apples at farmers’ markets and farm shops, or online, over the autumn and winter - they taste a million times better than the few standard varieties sold in supermarkets, will be grown closer to home and will be better for you as are fresher. These last for about 5-6 days in the fridge. Serves 4-5 125g oats 2 large apples A few handfuls of blackberries A good sprinkle favourite nuts or seeds 1 tsp cinnamon 50g maple syrup or to taste Zest 1 juice of 1/2 lemon 200ml any type of milk 200g plain, Greek, kefir or coconut yoghurt 35g coconut flakes, toasted 35g blanched hazelnuts, toasted Put all the ingredients into a large container (I’m using a 3 litre Kilner jar here but any Tupperware will do). Grate 2 large apples into the container and add the blackberries, reserving a handful for later. Give it a good stir and place in the fridge for a minimum of 4-5 hours. Check the consistency in the morning and add water or milk to loosen the mixture to the consistency you like. Adjust the sweetness to your taste. Serve with a handful of blackberries, a dollop of yoghurt, toasted hazelnuts and coconut flakes. Recipe from Meat Free Mexican, available in all good bookshops!!
