Vegan Stuffed Squash Blossoms with @fiskars #ad⁣⁣ ⁣⁣ There were many levels of inspiration for this #PlantToPlate dish, but it all started with squash blossoms. Squash blossoms are very much edible, and the male flowers are perfect candidates because they don’t produce fruit. I grabbed my trusty Fiskars shears and harvested all the male blossoms I could find 😋⁣⁣ ⁣⁣ Italian stuffed squash blossoms are traditionally filled with cheese, so I made my own vegan cheese out of soaked cashews, nutritional yeast and basil. This is a combo I’ve used a few times before but I’ve never had to clean, prep and stuff the squash blossoms which is a pain in the 🍑 ⁣⁣ ⁣⁣ After they were stuffed, I dipped them in a flax egg (1 TB flax meal with 3 TB of water) and rolled them in garbanzo flower before gently pan frying them on the stovetop (~2 min per side until golden brown). They looked so good but I was getting excited and wanted to take this dish to the next level with TWO sauces 🤯⁣⁣ ⁣⁣ I had plenty of fresh basil so I whipped up a quick pesto with walnuts, and then I went to the farmers market for bread and heirloom tomatoes. Pan con tomate is a common appetizer in a few different European countries, and I roasted garlic and heirloom tomatoes, gave it a quick blend, and then spread it over the toasted baguette with EVOO 🤤⁣⁣ ⁣⁣ This vegan take on a rustic, Mediterranean classic was soooooo goooood and it’s just another reason to grow squash in the garden 😉⁣⁣ ⁣⁣ BTW - the pan, plates, cutting board and even the utensils are from Fiskars Iitalia brand.
