Save this for a weeknight dinner idea, because surprisingly, this Easy Homemade Vodka Sauce & Penne Pasta is low involvement! 👌🏼
I paired it with @eatgoodwheat high fiber penne pasta that fills you up and keeps you going, while being made with one simple ingredient! USA grown and milled GoodWheat. 🤍
Easy Homemade Vodka Sauce & Penne 🍝
28 oz. whole tomatoes, undrained
3 Tablespoons olive oil
3 cloves garlic, minced
1 Tablespoon fresh basil, chopped
3 Tablespoons vodka
1 teaspoon red pepper flakes
3⁄4 cup heavy cream
2 Tablespoons cold butter
Salt/pepper, to taste
3⁄4 lb of penne pasta
Dried parsley
1⁄4 cup Parmesan cheese, finely grated
1. Puree tomatoes in a blender and set aside. (I left my tomatoes a little chunky, but you can blend until smooth, if you like.)
2. Heat your olive oil in a large pan over medium heat. Add the minced garlic & basil. Cook for 1-2 minutes, until fragrant and soft. Turn off the heat.
3. Add the vodka to the pan and let it sizzle. Turn the heat back to medium and reduce the vodka until there is about a Tablespoon left.
4. Add the pureed tomatoes and let simmer for about 45 minutes, allowing sauce to reduce and become thick. Stir occasionally. (The cream will thin it back out!)
5. During the last 12 minutes or so, start cooking the penne pasta. I used about 3/4 of the package. Save 1/4 cup of the pasta water.
6. Add the heavy cream and red pepper flakes to the sauce.
9. Add 2 Tablespoons cold butter to the sauce, along with 1/4 cup pasta water. Stir to combine. Then season with salt/pepper.
8. Add the drained pasta to the sauce and garnish with Parmesan cheese & parsley. Voila!
