Practice dinner for December 4th dinner party. First is a romaine lettuce salad with johnnycake crumble, sunflower, benne, and broken anchovy dressing. Then second is a Foie and grit, with a separate plate of johnnycakes, fruit preserves, and country ham with sorghum and toasted benne. Finally the third dish and third try doing it is @hseanbrock sumac pork belly with herbed farro and mushrooms. The pork was cooked over hickory embers and sliced right before plating. One of the most fun dinners I have ever done! Getting to play with new and decadent ingredients and trying different traditions is always a game changer for me and I love trying and learning through it all!
