Pithivier of beef and summer vegetables
A pithivier returns to the pass. New to the menu and thus reflective of the seasons and what we crave in the warmer months, this is a slightly lighter version than previous - the beef fillet topped with a farce of chicken and summer vegetable mousse and its accompaniments (roasted courgettes, summer lettuce, lemon vinaigrette) bright, clean and fresh.
