🍯✨ HONEY CAKE ✨🍯

• 1 cup brown sugar (150 g)
• 3 large eggs (room temp)
• 3⁄4 cup neutral oil (188 ml) — avocado, grapeseed, or canola
• 1 cup honey (250 ml)
• 21⁄2 cups all-purpose flour (385 g)
• 2 tsp cinnamon (6 g)
• 3⁄4 tbsp baking powder (10 g)
• 1 tsp baking soda (6 g)
• 1 cup strong black tea (250 ml, from 2 tea bags — Earl Grey or English Breakfast, can be decaf)
• 1⁄2 cup sliced raw almonds
• Extra honey for drizzle 🍯 Method:
1️⃣ Brew 1 cup of strong tea with 2 bags. Let cool.
2️⃣ Whisk eggs until frothy, then whisk in brown sugar.
3️⃣ Add oil, then honey (tip: measure oil first so honey slides out easily).
4️⃣ Sift in flour, cinnamon, baking powder + baking soda. Mix until combined.
5️⃣ Slowly stir in cooled tea until batter is smooth.
6️⃣ Grease pan, pour in batter, tap to release bubbles.
7️⃣ Sprinkle almonds on top.
8️⃣ Bake at 350°F (175°C) for 35–40 min, until toothpick comes out clean.
