Raspberry cheesecake bars by @veganofaus š
These are delicious, that cheesecake layer is so smooth and dreamy! š
For the base:
8 weetbix
1/2 cup oat flour
1/4 cup melted vegan butter
3-4 tbsp maple syrup
Crush the Weet-Bix and then adding oat flour, butter and maple syrup and stir until combined. Layer and press into a square baking dish and refrigerate
Meanwhile, for the cheesecake layer:
1 cup frozen raspberries, thawed
1 cup cashews (soak in boiling water and leave for 4 hour +)
4 tbsp maple syrup
1/2 cup coconut cream
In a high speed blender, combine all ingredients until smooth and creamy. Layer on top of the Weet-Bix layer and refrigerate overnight, or sit in the freezer until firm enough to slice.
Optional: top with shredded coconut, frozen raspberries
