It's National Artichoke Hearts Day in the USA, and we have the perfect recipe for you to try -- Spinach Artichoke Dip! šŸŒ±šŸ˜ā  ⁠ INGREDIENTS:⁠ - 1 teaspoon oil⁠ - 3 cloves garlic chopped⁠ - 10 ounces fresh baby spinach⁠ - 16 ounces vegan cream cheese (room temperature)⁠ - 1⁄3 cup vegan mayo⁠ - 1 (14-ounce) can of artichoke hearts drained and chopped⁠ - 1⁄4 cup nutritional yeast or vegan parmesan⁠ - 1⁄4 teaspoon black pepper⁠ - 1⁄4 teaspoon salt⁠ ⁠ METHOD:⁠ 1. Preheat oven to 400°F.⁠ 2. Heat oil in a large pan on medium heat. Sauté garlic until browned, about 2 minutes. Add in spinach and sauté until wilted. Remove from heat.⁠ 3. In a baking dish, mix together the vegan cream cheese, mayo, artichoke hearts, nutritional yeast, sautéed spinach, salt, and pepper.⁠ 4. Bake for 15-20 minutes or until the dip is hot and bubbly.
