🥓🧀Smokey Bacon & Cheddar Cheese Scones 🥓🧀
Save these to go with soup, your Christmas party buffet, savoury afternoon tea, snacks, picnics... any ... ALL TIMES ACTUALLY ... because they are incredibly delicious and so easy to make! 😘
Smokey Bacon and Cheddar Cheese Scones
Makes 7-9
Ingredients
150g smoky bacon trimmed
265g self raising flour
65g lightly salted butter cubed
1 tsp English mustard powder
1 tsp baking powder
1/4tsp salt
145g extra mature cheddar grated
135ml warm milk
2tsp milk to glaze
Method
1. Grill or fry your bacon until it has a little colour then remove from the heat to cool. Turn on fan oven to pre heat to 200degrees Celsius.
2. Put the flour, mustard powder, salt, baking powder and butter into a mixing bowl and rub it into the fat until there are no big lumps. Add most of the cheese (save a little back to top the scones) and mix through. Chop up your bacon into small pieces and stir these in, then slowly add the milk using a fork to mix, then bring the mixture together with your hands.
3. Flour your kitchen top and pat the dough out and fold it over a couple of times to ensure an even consistency. Shape it back onto a round, flour a rolling pin and then roll the dough out to about 3cm deep, making sure it’s an even depth.
4. Cut the scones using a 6-8cm cutter. Press down firmly, but don’t twist, then carefully lift the cutter and set the scone aside while you cut out the rest. You will need to shape and reroll the dough to get the last couple. Brush the tops with milk and add a little cheese to each.
5. Scatter a flat bottomed baking tray with a handful of flour, put it in the oven for a couple of mins to heat up then place the scones on the tray and bake 11 mins if you used the smaller cutter, 13 mins if you used the larger.
