When I told people that @beavisandbutthead were coming to @smorgasburgla to try and break the @guinnessworldrecords for largest serving of nachos ever, the reactions ranged from “that is awesome” to “that is idiotic” and everything in between. TP jokes were made, eyes were rolled, good questions were asked. (“Will Beavis & Butt-Head be there?” “Um, you know they’re not real people right?”) But the reality of what actually happened yesterday was one of the coolest displays of planning, and thoughtfulness that I’ve ever seen at any event I’ve ever been a part of. You might not know this, but to break any food record Guinness not only requires the supervision of a food safety specialist (to oversee everything and insure that it is prepared properly and safely) but they also require there to be absolutely no food waste whatsoever. So @paramountplus @jeffbeezer66 @single_serving and their amazing team (which included @chefstefkelly, a team of culinary students from @ccaplosangeles + @browningbison and blowtorches from @thegastrogarage!) developed a nacho recipe that would not only break the record of 4600lbs and be served to fans at the event (with tortilla chips from @laprincesitatortilleria and salsa from @saucychickrotisserie @cenavegan @loscochinitos_ ), but that could also be loaded into sheet pans and taken to a bunch of different non profit organizations, and served as a casserole to people in need all over Los Angeles. I loved having a front row seat to the whole thing and I’m so grateful that Smorgasburg got to be a part of it.
