Zest Seoul!
My final post for this drink series is Zest Seoul, @zest.seoul , #16 in the World’s 50 Best Bars 2025, and #2 in Asia’s 50 Best Bars 2025.
From the time I entered this establishment, I was impressed with their minimalist and sustainability-focused vibe. You will not find a wall of branded alcohol bottles. Instead they display their own house-distilled and homemade spirits to create a distraction-free ambiance.
We know the word Zest as the outer skin of a citrus fruit, but this is also their abbreviation for Zero-Waste and this philosophy is weaved throughout everything they do. Here are some examples:
-They make their own carbonated drinks from scratch thereby reducing food waste, PET bottles, aluminum cans, and disposable packaging.
-Their menus are printed using green energy and made from organic materials such as composted mandarin peels.
-Their uniforms are made from recycled fabrics.
Additionally, they harvest their own fresh herbs and edible flowers every week through their own farmer resulting in cocktails and mocktails that are so amazing in taste and visually stunning.
Tip: Make a reservation in advance. We got there well before opening and they were able to accommodate our party of 2 before an existing reservation.

‘C’orn Star Martini - roasted sweet potato soju | corn & tomato brine | passionfruit | chervil (my favorite!)
No Coconut Here - over-proof craft makgeolli | mezcal | lime | lacto-fermented pineapple | walnut orgeat
Harvest Hour - Jeju millet soju | corn silk | second flush citrus | yellow bell pepper | saffron | black sesame | barley sprouts
Kombucha Maid - pineapple citrus | SCOBY fermented ginger kombucha | cucumber | spearmint | soda
Hwachae - Boatyard organic gin | Shine muscat wine | clear watermelon | lemongrass | apple mint | subtle carbonation (the pink ball is a watermelon candy!)
