Last year I visited my first Palenque @graciasadiosmezcal in Oaxaca, Mexico the birthplace of Mezcal. it was such an enriching experience where lots was learned. I brought back with me some of the “machacado” which is the agave piña juice after its roasted on a pit with hot volcanic stones and left on wood barrels to ferment. I used the juice to make an amazing vinagre with hints of roasted agave, tartness and sweetness.
