I made a strawberry rhubarb salsa for the first time in my early 2010s era, food blogger phase 😂 but its stuck with me. I was so excited when I found rhubarb at the co-op last week and couldn’t wait to make this. For this batch I combined: - 1 heaping cup diced strawberries, lighty macerated in a tbsp of sugar - 1 stalk rhubarb, ends cut & diced - 1/2 small red onion, diced - 1 jalapeno, diced - chopped cilantro - juice of 1/2 lemon - chive blossoms - salt to taste This is just a starting place, you’ll eventualy notice I’m very much a mesaure with your heart kind of cook.
