GED ON! 🙌🏼 Cornish Pasties To make 5 Ingredients For the pastry 600g plain flour 150g cold butter diced 150g cold lard diced 1 tsp salt 250ml cold water plus a little extra if needed 1 beaten egg (to glaze) For the filling 500g skirt steak finely diced 1 medium onion 180g thinly sliced potatoes 180g thinly sliced swede Generous salt & pepper 5 knobs of butter Method 1. Put the flour, butter, lard and salt in a mixing bowl and semi rub in the fat - leave some larger lumps. Make a well and add the water, use a butter knife to bring together and press gently into a ball. Cover and refrigerate for 1hr. 2. Divide pastry into 5 balls. Flour the kitchen top and rolling pin, then roll out one ball just enough that you can cut around a 15-20cm plate. Off cuts can be used for initials on top or patching up. 3. Lay half the pastry disc over the rolling pin. The front half is for the filling. Make a light indentation 2.5cm from the edge, as a border for the filling. 4. Place a thin layer of steak, swede, potato, onion and season generously. Repeat with a 2nd thin layer steak, swede, potato and onion, season again, finish off with a little steak, a little seasoning and a knob of butter. 5. Pat cold water on the pastry edge, lift the back piece of pastry over the filling to make a lid, gently bring them together, then crimp. 6. Start at the top. Place your thumb on the top piece and your index finger underneath, with a firm movement twist the pastry up and back towards you and down, twisting the top and bottom together until complete. Repeat for the other pasties. 7. Place pasties on a floured baking tray with room between each. Brush with egg and then stab a small hole in the tops. Bake at 200 degrees C for 35 mins, then turn the oven off and leave the pasties to rest in the oven for 5 mins before serving. #cornwall #cornishpasty #familyrecipe #properjob #somebleddymaid
