TAMARI GINGER CHICKEN (gf + df) A cozy and nourishing tamari ginger chicken dish that is simmered in bone broth (enhanced collagen / gut healing benefits !!) — served with antioxidant-rich jaspberry rice and a tamari-marinated egg (extra protein and umami) INGREDIENTS: Chicken thighs, cut into 1 inch pieces *quality source of protein!! can be subbed with tofu 1-2 Shallots, finely diced Garlic, 6 cloves minced *helps support immune system* Tamari or coconut aminos, 1/4 cup *gluten free alternative to soy sauce, can also use soy sauce for non-gf* 1-2 cups of chicken bone broth (depending on the thickness of sauce preference) *source of collagen, collagen and minerals* Cooking wine, 2 tbsp Sesame oil, 2 tbsp Honey, 2 tbsp Dried red chillis (optional) Basil, 1 cup Green onion, 1 stalk sliced Snow peas, green peas, carrots, spinach (cut into bite-sized pieces) *optional 1 cup jasmine rice 1/2 cup jasberry rice @Jasberry *antioxidant packed* CHICKEN/RICE INSTRUCTIONS: (Can prepare chicken by velveting it in some baking soda to help tenderize the meat) 1. Sauté shallots in sesame oil until soft, then add garlic and stir. 2. Move aromatics aside and brown the chicken. 3. Add tamari, wine, and honey; simmer for 10 minutes. 4. Stir in bone broth, cook until reduced (20-25 minutes). 5. Cook rice according to your rice cooker’s instructions. 6. Lightly steam or blanch vegetables to retain crunch. 7. Once the sauce thickens, add basil and green onion. 8. Serve chicken, sauce, rice, and veggies.
