Sweet and Tangy Chili Lime Tofu Bowl Huge shoutout to @shredhappens on IG for the original recipe! πŸ‘πŸ½πŸ‘πŸ½πŸ‘πŸ½ It is absolutely mouthwatering! I made mine with 1/2 block tofu in place of the salmon in the original recipe and made my own simple sweet and tangy dressing as follows: 1 TBSP maple syrup 1 TBSP Dijon mustard 1 tsp hot sauce Splash of red wine vinegar Mix well until smooth. 1. Slice 1/2 block pressed tofu into thirds and spread about 2 teaspoons of Dijon mustard across each piece. Sprinkle with generous amounts of garlic powder, chili lime seasoning (I used @tajinusa) and cayenne pepper (optional) to taste. 2. Air fry tofu at 390 degrees F for 18-20 minutes until firm and lightly crisp. 3. Add greens, grains, cucumbers and avocado. I used 2 cups @organicgirl Super Greens mix, 1/4 large cucumber, 1/2 cup @simpletruth cooked red quinoa seasoned with a pinch of salt and onion powder, 1/4 avocado and a handful of sliced green onions. 4. Drizzle dressing on top! Each ingredient has so much flavor that it doesn’t need a lot of dressing. Did I mention it’s an absolute drool? 🀀🀀🀀 Nutritional Facts (using @myfitnesspal app): 556 calories 34g protein 20g fat 63g carbs * 13g fiber * * Eliminate maple syrup or use non-calorie sweetener and use cauliflower rice in place of quinoa to reduce carbs to 22 grams (11g fiber).
