Happy Thanksgiving from all of us to all of yours! Just make sure you finish setting the table before you try to sneak a bite.
Ingredients:
8 Wasa Whole Wheat crispbreads
2 boneless, skinless turkey breasts
1 tbsp olive oil, divided
1 tbsp dried sage
1 tsp salt, divided
1 tsp pepper, divided
4 medium-sized Yukon Gold potatoes
2 cups fresh green beans
2 tbsp butter
2 tbsp flour
1 cup chicken broth
1/4 tsp onion powder
3/4 cup milk (cow’s milk or non-dairy alternative)
1 tbsp butter
2 cloves garlic, minced or pressed
8 springs of fresh thyme, for garnish
8 sprigs of fresh rosemary, for garnish
Instructions
1.Preheat oven to 375° F and line a large baking sheet with parchment paper.
2.Pat turkey breasts dry and place on one side of the baking sheet. Brush with 1/2 tbsp of oil and season with dried sage, 1/4 tsp salt and 1/4 tsp pepper.
3.Using a fork, poke a few holes into each side of your potatoes. Line them up on the baking sheet’s opposite side.
4.Bake turkey breasts and potatoes together for 40 minutes.
5.While the turkey and potatoes bake, prepare the gravy. Start by adding butter to a medium saucepan over medium heat. Once it melts, add 1 tbsp of flour at a time, whisking to combine. Cook for 30 seconds – 1 minute, then add chicken broth, onion powder, 1/4 tsp salt and 1/4 tsp pepper. Continue whisking until gravy reaches desired consistency, about 8-10 minutes. Transfer to a separate container to cool.
6.Take turkey and potatoes out of the oven after 40 minutes and add green beans to the baking sheet. Drizzle with 1/2 tbsp of olive oil and season with 1/4 tsp salt and 1/4 tsp pepper. Put the whole baking sheet back in the oven for an additional 20 minutes.
7.Once everything is done, transfer potatoes to the same pot you used to make your gravy and add milk, butter, garlic, 1/4 tsp salt and 1/4 tsp pepper. Mash with a fork or potato masher.
8.To serve: Add a layer of creamy mashed potatoes to a Wasa Whole Wheat crispbread and top with a few green beans, a thin slice of turkey, a dollop of gravy and a sprig each of fresh rosemary and thyme.
