The Stikklesbærsnitter is here! But unlike @victorkaer and @karishmasanghi, you’re definitely not going to want to share this one! It’s a soft and chewy butter cookie with a layer of Gooseberry jam (that’s the Stikklesbær for all you non- Danes) with a just-crisp, caramelized cracked wheat crust. Side note: as @marius.jon points out, the jam could be red, green or somewhere in between!
