Mini Apple Pies 🍏🍎✨ Just thinking of “mini apple pies” makes me think of crisp fall days, warm sweaters, and that first cinnamon spiced bite that makes you close your eyes and smile! Recipe Filling • 2–3 apples (Granny Smith & Honeycrisp) diced • 1/4 cup granulated sugar • 2 tbsp brown sugar • 1 tsp cinnamon • 1 tbsp flour • 1/2 fresh squeezed lemon juice • 1 tsp vanilla extract Crust & finish • 1 box refrigerated pie crust (I like Pillsbury) • 1 egg (egg wash) Instructions • Dice apples, then add fresh squeezed lemon juice over apples. Add dry ingridients & vanilla to saucepan along with apples. • Cook in saucepan over medium heat ~5–7 min, until slightly softened. Let cool. • Roll out crust, cut circles, add filling, top with another circle. • Crimp edges (with fork), cut slits on top, brush with egg wash, sprinkle sugar if you want. • Bake at 400°F for 15–20 min until golden brown Enjoy warm!!! And try not to eat them all straight off the tray. **Save for fall treats, hosting, parties, etc...
