This was one of my Hello Fresh recipes and I absolutely loved it! Italian sausage pasta 1 pound rigatoni 1 bell pepper 4 scallions 2 Roma tomatoes 1 small lemon 1 pound Italian sausage (can substitute chicken breast, ground beef or shrimp) 1/4 cup sour cream 1 tsp red pepper flakes 1/2 cup shredded Parmesan cheese 4 tbsp cream cheese softened 2 tbsp olive oil 2 tbsp unsalted butter Salt Pepper Cook the pasta in cold salted water according to package directions. Reserve 1/2 cup of the pasta water before draining Slice the pepper. Slice the scallions and separate the whites and green parts. Dice the tomatoes Heat the oil in a large pan or Dutch oven. Sautée the peppers and white parts of the scallions 4 minutes. Season with salt and pepper to taste Remove the sausage from the casing and add to the pan, break it up and cook another 4-6 minutes until cooked through. Add more salt and pepper and the red pepper flakes, if desired. Add the tomatoes, cream cheese, sour cream, butter and half the cheese. If the sauce is too think add a little pasta water to thin it out. Zest the lemon and add that in plus a squeeze of lemon juice. Add the cooked rigatoni and toss until combined Top with the green scallions and Serve with the remaining cheese #pastameals #weeknightdinnerideas #20minutesmeals
