A raviolo of caponata comprises our new vegetarian main course. Made in the classical manner, the caponata is cooked down for hours and hours and the pasta itself is topped with roasted pine nuts, olive, crispy capers, picked herbs and whipped seasoned ricotta. We serve this with buttered spinach and the whole dish is finished with vin jaune sauce.
