These Pumpkin Pie Overnight Protein Oats are the perfect fall breakfast. This recipe is gluten-free and can be tailored to plant based on what protein powder you use.
✨Pumpkin Pie Protein Overnight Oats✨
*1/2 cup rolled oats (I like Bob’s Red Mill)
*1 scoop vanilla whey or plant based protein powder
* 1/2 tbsp chia seeds
* 1/2 tsp pumpkin pie spice
* 3/4 cup unsweetened vanilla almond milk
* 2 Tbsp pumpkin puree
* 2 tbsp honey or maple syrup or sweetener of choice
*Optional. Dairy free whipped topping and crushed walnuts
✨Instructions✨
1. Mix it all together in a jar and place it in the fridge overnight.
2. Top with dairy free whipped cream and chopped walnuts.
✨NOTE: Will last up to 4 days in the fridge.
