Making a hearty lobster pasta for this holiday season that will satisfy any pasta cravings. I am using Alce Nero pasta which brings wholesome organic pastas and sauces with clean ingredients and authentic Italian flavours to your table. Pasta Range is made using only organic durum wheat grown in Italy and spring water from the Trentino Alps. The Italian tomato varieties used in the range of purees and sauces features firm, well-structured flesh as well as a sweet and delicate flavour. The tomatoes are harvested at just the right level of ripeness, and are processed within eight hours on average in order to preserve all the flavours, aroma, and nutrients. Recipe Ingredients * Alce Nero Organic Durum Wheat Pasta, Spaghetti – 250 g * Whole Lobster – 2 pcs * Oil – 4 tbsp * Water – 600 ml * Garlic – 4 cloves * Olive Oil – 2 tbsp * Thyme – 2 sprigs * Butter – 25 g * Alce Nero Organic Chunky Tomato Puree – 1 bottle * Cream – 50 ml Method of Work 1. Blanch the lobsters in boiling water for 30 seconds, then transfer to an ice bath. Remove the shells. 2. Sauté the shells in a pan with oil for about 4 minutes. Add the water and simmer for 20 minutes (Optional: Blend the shells and strain to make a richer lobster stock) 3. Sweat the garlic in olive oil, then add the lobster meat, thyme, and butter. Baste until the lobster is fully cooked. 4. Remove the lobster meat from the pan. Add the tomato purée and lobster stock, then reduce until the sauce thickens. 5.
