Ever have a little bit of lox left in the package after a brunch and you’re not sure how to use it up? Make this spread and enjoy a delicious protein snack with your daily scoop of beeya. We love this on a toasted bagel with a boiled egg for a super nutritious breakfast, and it also works great as a cracker dip for a midday snack. Not only are you getting some protein but you’re also boosting your omega-3 intake which helps fight chronic inflammation and support a healthy brain! Two things we all want, right?! LOX SPREAD Serves: 2-3 portions Prep time: 5 mins Ingredients: ✨1/2 cup cured or smoked salmon, chopped ✨1/3 cup cream cheese (plant-based works great if you try to avoid dairy, that’s what we used!) ✨a handful of fresh dill ✨1/2 a small red onion, chopped ✨1/2 tsp dijon or brown mustard ✨1 slice of lemon, squeezed ✨ a pinch of sea salt and black pepper To Serve: ✨Crispbread, we used seed crispbread ✨Beeya seeds Steps: 1️⃣ Toss everything for the spread in a food processor and pulse until combined. 2️⃣ Use it on bagels, as a cracker dip, or on top of crispbread. We like to sprinkle a bit of beeya on top too. 3️⃣ Store in the fridge, covered, for up to 3 days.
