Supportive foods for autoimmune disease include delicious (and adorable) microgreens! 🌱 Microgreens are the seedlings of vegetables and herbs. Think of them as the infant of their adult counterparts. They’re super easy to grow on your own and have a speedy harvest window, making them readily available. 1) They contain selenium, manganese and a range of B vitamins. These are amongst the common vitamins and minerals shown to be deficient in those with autoimmunity 2) Microgreens are a powerhouse of nutrients. Some provide 40x the nutrient value than their full grown counterparts! For example, red cabbage micro greens contain 40x more vitamin E and 6x more vitamin C than a fully mature red cabbage 3) Microgreens are rich in sulforphane - a sulfur rich compound found in cruciferous vegetables. Sulforophane neutralizes toxins, reduces inflammation, protects your DNA and supports a strong immune system. Specifically, sulforaphane can activate the Nrf2 pathway in our bodies to produce the most powerful antioxidants that boost our immune systems to fight off viruses. When this pathway is triggered, the body will begin to produce more of its own antioxidants, making it more readily able to fight the precursors of disease and illness Grow them yourself at home or find them at your local grocery store or farmers market. Sprinkle some on top of avocado toast, a salad, onto a sandwich or add them to a smoothie! The latter two are my favorite ways as of late 🥪
