Sometimes you just need dessert for breakfast! I love this dark chocolate cherry Chia pudding recipe because it’s so quick and simple to make & you can batch it out!
I start with one can of full fat coconut milk; make sure you shake it vigorously to mix the fat and the water separated. To that, you’re going to add about 2 tablespoons of Chia seeds, and 2 tablespoons of unsweetened cocoa powder. Make sure you mix this vigorously because the cocoa powder and the milk have a hard time mixing so if you need to use an immersion blender, that can work. Next, I’m going to add my sweetener of choice. Here I use Stevia liquid drops; you only need a few drops or you can sweeten it to your liking. Honey also works well here. Once the mixture is all blended together, you’re going to refrigerate for at least 4 to 5 hours so that the mixture solidifies into a pudding like consistency. After that, I layered my pudding in a dish with some cherries that I thawed (I use tart cherries but you can use sweet) and then I topped with unsweetened coconut flakes and crushed dark chocolate pieces.
This pudding is full of healthy, fat, protein, and antioxidants. This is also a great recipe for those that need to watch their carb intake!
