Ingredients:
• 10 oz. @eatgoodwheat spaghetti pasta
For the marinara sauce:
• 28 oz. cherry tomatoes
• 2 Tbs. Tomato paste
• 1/2 shallot, finely sliced
• 1 cup pasta water reserve
• 1 tsp. each of salt and pepper
• 1 Tbs. Italian seasoning
For the meatballs:
• 1/2 lb. ground beef
• 1/2 lb. mild Italian sausage
• 2 eggs
• 6 garlic cloves, finely minced
• 1 slice white bread + 3 Tbs. milk
• 1 tsp. each of salt, pepper, Italian seasoning
• 1/4 cup each of grated Parmigiano Reggiano and Italian breadcrumbs
Instructions:
1. Bring a large pot of seasoned water to boil. Cook the spaghetti per package instructions until al dente. Set aside 1 cup of pasta water. In a small bowl, add the sliced bread and milk. Set aside to soak for a few minutes.
2. To a large pan, add the cherry tomatoes, finely sliced shallot, tomato paste and seasonings. Simmer on low, covered, for at least 25-30 minutes, stirring frequently, until the tomatoes burst and all the juices are released. Then, remove from the pan and add to a blender with one cup of pasta water reserve and coarsely blend. Some chucks of tomatoes are preferred.
3. In a large mixing bowl, add the meatball ingredients, including the soaked bread without the milk. Use your hands to mix together just until combined. Do not overmix or the meat will become very chewy. Roll into bite size balls, about 2 Tbs.
4. Heat a large pan with olive oil and sear the meatballs for about 2-3 minutes on each side until browned. Then, add the marinara sauce back into this pan with the meatballs and simmer for at least 10-15 minutes to finish cooking. Add the cooked pasta and mix well to coat the noodles. Top with extra Parmigiano Reggiano and fresh basil. Best served immediately!
