Family style spinach and cheese burekas, perfect for breakfast fast, entertaining, or feedeing a large crowd. You can use any cheeses of your choice and any toppings too. You can skip the spinach if you’d like and you can also add olives, chives, or canned mushrooms to the cheese mixture. CHATIMA TOVA✨ Tip: Make sure your cheese are all cold, straight from the fridge. This will ensure that your mixture isn’t too watery. Make sure to thaw your dough in the fridge. For best results overnight. I bake this on a half sheet baking pan Ingredients: •1 cup cottage cheese •1 cup sour cream (make sure to remove any liquids from the top) •1 cup crumbled feta cheese •2 cups shredded mozzarella or any shredded cheese •2 large eggs plus 1 more for brushing on top •2 cups chopped fresh spinach •2 sheets of puff pastry •assorted toppings like sesame seeds, za’atar, or everything but the bagel seasoning. Directions: * In a large bowl, mix assorted cheeses, eggs, and spinach. * Slightly roll out the first puff pastry sheet on floured surface and on a piece of parchment paper using a rolling pin. * Transfer the rolled-out dough onto a baking sheet with the parchment paper. * Spread the cheese mixture evenly over the entire sheet. * Slightly roll out the second puff pastry sheet and place it on top of the cheese mixture. * Cut vertical lines in one direction and then tilt the pan to cut in the opposite direction, creating a pattern. * Beat one egg and brush it over the entire sheet for a golden finish. * Add your favorite toppings, alternating for a visually appealing design. * Preheat the oven to 375°F (190°C). * Bake for 45 to 55 minutes or until golden brown, depending on your oven. * Cut along the previous lines to easily separate the burekas. * Enjoy your delicious cheese and spinach burekas! #sivanskitchen #fyp #explorepage #yomkippur #cheese
