🌶 Easy, 15 Minute Spicy “No Vodka” Pasta. Cooler days are just around the corner and what’s more cozy than wrapping yourself in a blanket and enjoying a warm bowl of freshly made pasta? Here are a few of my favorite tips for creating the best pasta sauce flavor at home: #1 use freshly grated cheeses, #2 reserve pasta water for the sauce base and #3 always, always, always say yes to extra garlic. Full recipe is posted below and don’t forget to tag @bakecookrepeat. Happy cooking! Ingredients: • 12 oz. Pasta + 3/4 cup pasta water For the sauce: • 1/2 cup Pecorino Romano, freshly grated • 1/2 cup Parmigiano Reggiano, freshly grated • 1/2 cup heavy cream • 1/4 cup tomato paste • 1/2 teaspoon red pepper flakes (more or less based on your spice preference) • 1 whole shallot, finely sliced • 6 garlic cloves, finely minced (but really, it was probably closer to 10) • 2 Tbsp. Butter + 2 Tbsp. Olive Oil • Fresh basil, for garnish • Salt and pepper, to taste Instructions: 1. Bring a pot of water to a boil. Season well with salt and cook the pasta until al dente. Reserve 1/2 cup of pasta water for later. ✨Tip: Always reserve pasta water prior to draining the pasta. The starches released from the pasta while cooking naturally help thicken sauces and make them silky smooth. 2. Add the olive oil, butter, shallots and garlic to a saucepan. Cook on low for a few minutes until translucent and fragrant. 3. Stir in the tomato paste and cook for a few minutes until slightly caramelized and darker in color. Whisk in heavy cream and crushed red pepper flakes. Then, add the cooked pasta, pasta water and grated cheeses. Stir to combine and simmer for a few minutes. Garnish with fresh basil and more cheese.
