Hey Rise Up Fam! We’re back with #RUAFoodMemories serving up our next course! Fresh out of the fire, it’s the layered Albanian cuisine submitted by aspiring story artist @ushtima__! Now serving Flija! 🇦🇱 “Flija is my favorite dish.” Made from a flour based batter, this meal is composed of pancake-like layers that have been individually stacked together with a yogurt filling between each layer. Typically, it can be served with sour milk, pickled vegetables, honey, and a variety of other flavorful spreads. This Albanian dish is prepared in both Albania and Kosovo. “It takes around 3 hours to be made, and it has been made outside in the fire since the old times.” In fact, each layer of the dish is covered with a “saç” which is a preheated dome used to maintain the temperature while cooking. “The process of making this is a bit extensive, but it is a time when everyone gathers around and talks for hours while helping with each layer. When someone makes flija for you, that is the highest grade of respect they will give you because it is very hard to make and it is the most important dish.
