A little plant based PCOS option! I adapted this recipe from my friend @caileeeats and its SO GOOD! I love a curry chicken salad and this gives the same vibes with a plant based option. I added a little hemp seeds for more PCOS friendly plant based fiber and healthy fat. I would add this to greens with balsamic and olive oil or eat it on its own! 4 cups of chickpeas 1/2 chopped red onion 4 stalks chopped celery 1 handful chopped cilantro 4 stems chopped green onion 1/4 cup hemp seeds Juice of 1 lemon (I like lemon though, you could do 1/2 and taste from there) 1/4 cup mayo 2 tsp spicy curry powder 1/2 tsp turmeric 1/2 tsp salt 1/2 tsp pepper #pcos #pcosmealideas #pcosrecipes #healthylunch #plantbasedrecipes
