For my veg lovers, a perfect dinner with a side of steamed white rice 🄵 INGREDIENTS: •3 Chinese Eggplants •2 Tablespoons of Oil •1 Tablespoons of Corn Starch •2 Tablespoon of Sesame Oil •2 Red Chilis •1 Tablespoon of Sliced Ginger •6 Garlic Cloves •2 Tablespoons of Soy Sauce •1 Tablespoon of Oyster Sauce •1 Tablespoon of Rice Vinegar •1 Teaspoon of Red Chili Flakes •Scallions To Garnish INSTRUCTIONS: 1. Chop your eggplants into small pieces and coat evenly with corn starch. 2. Fry till golden brown and set to the side. 3. Add sesame oil to the pan, and sauté the red chilis, scallions, and sliced ginger. 4. In a separate bowl, combine the soy sauce, oyster sauce, rice vinegar, garlic, and red chili flakes. 5. Pour over onto the eggplant till it’s cooked. 6.
