I caught the biggest lobster of my life, it weighed in at 3.2kg. Huge!! Here is what I cooked with the meat! * Put the lobster to sleep by putting it in the freezer for one hour. * Bring a big pot of ocean water to the boil place the lobster in the water for 10 minutes. * Placed the lobster in the fridge till it becomes cool. * Twist the lobster tail from the head and it will detach itself. * Slice the shell in half remove the meat and dice into bite-size pieces Make a garlic aïoli see recipe below. * Mix the lobster through meet through the garlic, aïoli and season with your favorite green herbs, I used dill, picks and lemon rind. Add your lobster meat to the aioli season to tastes. * Toast your bread buns in the Traeger grill add the lobster meat, lettuce leave and cheese of choice. Serve with smashed potatoes. Yum!
