This legendary bar founded by Hisashi Kishi in Ginza is dedicated to perfecting its ice. They use two kinds: one is natural ice made by freezing pure spring water for two weeks each winter at their own quarry on Mt. Tateshina in Nagano. The other is craft ice made in Kyoto, frozen for five days using special machines—they even hold a rare ice manufacturing license there. The blocks are then shipped to Tokyo, where each piece is hand-cut with a knife forged from Japanese sword steel and shaped to fit your glass perfectly. So clear it’s called “ninja ice”, so pure it melts incredibly slowly, keeping your drink crisp and undiluted to the last sip. Japanese bartending at its finest.
