Sleeping Gingerbread Pastries by @thelittleblogofvegan ❤️Who wants one??
Vegan + 5 Ingredient! With flakey puff pastry, a Ginger Biscoff filling with a mini gingerbread man biscuit!
What you’ll need:
🎄1 sheet of Vegan puff pastry
🎄1 jar of Biscoff spread
🎄Ground ginger
🎄Dairy-free milk (for glazing)
🎄Mini vegan gingerbread man biscuits
⭐️Method
1. Preheat oven to 180 degrees c and line a baking tray with grease proof paper.
2. Roll out the puff pastry and cut 3/4 into medium sized squares. Cut the other 1/4 into small squares for the ‘duvet’ & smaller rectangles for the ‘pillows’.
3. Mix a few tablespoons of Biscoff spread with 1-2 tsp of ground ginger, mix. Spread the ginger biscoff over the puff pastry squares, then press on a ‘pillow’, place a ginger biscuit on top & top with the pastry ‘duvet’. Crimp edges together with a fork.
4. Brush with milk & sprinkle over sugar (optional)
5. Bake in the middle of the oven for 10-12 minutes or until golden brown. Remove from the oven & dust with icing sugar. Store in the fridge for up to 3 days.
