Mango Lime & White Chocolate Protein Muffins
WHAT YOU NEED
- 1 1/2 Cups SR Flour
- 2 Scoops @macr0mike Caramelised White Choc Protein Powder (can sub for Vanilla protein or almond meal)
- 1 tsp Baking Powder
- 2 Eggs
- 1/2 Cup Milk
- 1/3 Cup Oil
- 1/2 Cup Maple Syrup
- 1 tsp Vanilla Extract
- 1 Mango, diced
- 1 Lime, zest + Juice of half
- 1/2 Cup White choc chips
WHAT TO DO
- Preheat oven to 180C and grease a 12 hole muffin tin
- Combine all of the wet ingredients in a mixing bowl, add flour, protein powder and baking powder and mix until well combined.
- Add lime zest, juice, mango and white choc chips and fold to mix through
- Spoon mixture into muffin tin and bake for 20-25 minutes or until a skewer comes out clean
