Behind the Scenes: Triangoli ⠀ Freshly pasta is rolled into sheets, then cut into squares. @tierra_vegetables celery root is cooked with cream and blended until smooth to make the filling of the triangoli. Each fresh square of pasta gets a perfect piping of filling, receives its pasta topper, and is the formed into a triangular shaped ravioli. The pasta is then crimped and trimmed (with our trimmers @chefevanallumbaugh brought back from Italy!) and the triangoli are rested before being cooked for service.
