Here lies a sheet of roasted konbu. We love to layer the flavor profile by roasting it in the oven before adding to some of our marinades, finishing oils, various broths and the list goes on. For us it is a must because it helps to add a natural umami richness to our dishes.
UMAMI meaning “essence of deliciousness” in Japanese is one of the core 5th taste sensations along with sweet, salty, bitter and sour. These chemical compounds contain savory rich characteristics that help us dig into the depths of deliciousness. Not limited to any particular ingredient but similar levels of umami can be found in aged cheese, mushrooms, asparagus and ripe tomatoes.
