Insalata di Cicoria: Castelfranco, Persimmon, Tomales Farmstead Creamery Teleeka, Mint, Hazelnut ⠀ Castelfranco, part of the radicchio family, has an exquisite bitter flavor with sweet undertones, much milder than radicchio, and traditionally only available during winter months. The beautiful butter colored leaves are uniquely dotted with spots and veins in varying shades of burgundy and violet; a feast for the eyes! We source our greens from @LongerTableFarm in Sonoma, one of our favorite new farms that we started sourcing heavily from in 2022. ⠀ 2 types of persimmons are utilized in this dish, 3 different ways. Fuyu persimmons are sliced fresh as well as being sliced and pickled with golden balsamic vinegar. Super ripe Hachiya persimmons are mixed with the golden balsamic pickle liquid and chestnut vinegar to make a vinaigrette. The salad is carefully built in layers to distribute the persimmons, lemon peel, and @TomalesFarmsteadCreamery Teleeka cheese (which adds brightness and rich depth of flavor.) ⠀ A final topping of toasted hazelnuts and sprigs of fresh mint complete the dish.
