How about a mouthwatering pancake recipe that can ALSO provide a stable glucose response? Co-Founder and Chief Medical Officer @DrCaseysKitchen shares a recipe for almond flour pancakes topped with berry compote in our latest Levels Kitchen video đâ

đ„ Almond flour pancakes (adapted from @meganellam)â
â
Ingredients:â
- 4 eggsâ
- 2 tsp vanilla extractâ
- 3 oz unsweetened nut milkâ
- 1/4 cup melted coconut oilâ
- 1 cup almond flour (super fine, not almond meal)â
- 2 tbsp coconut flourâ
- 2 tbsp alluloseâ
- 2 tsp baking powderâ
- 1 pinch of flake saltâ
- Coconut oil for fryingâ
- 1 teaspoon cinnamonâ

Instructions:â
- Crack eggs into a large bowl and whisk gentlyâ
- Add the rest of the ingredients and continue to whiskâ
- Allow mixture to rest for 5 minutesâ
- Preheat a large frying pan and coat it with a small amount of coconut oilâ
- Drop small rounds (1â3 - 1â4 cup) of batter into the panâ
- Cook each pancake for 1-2 minutes or until the bubbles on the pancake surface pop. Then flip the pancake and cook on the opposite side until cooked through (another 30-60 seconds)â
- Transfer cooked pancakes to a plate and cover them with a towel to keep warmâ
- Top with your berry compoteâ

Ingredients:â
- 3 cups mixed berriesâ
- 1â2 tsp saltâ
- 1â2 tsp fresh lemon zestâ
- 3 tbsp fresh lemon juiceâ
- 2 tbsp basil or chia seedsâ
- Water as needed for thinningâ
â
Instructions: â
- Add berries, salt, and fresh lemon zest to a saucepan over medium heat. If using fresh berries, add lemon juice (lemon juice is optional if youâre using frozen berries)â
- Stir the berries occasionally as they begin to cookâ
- Once the mixture starts boiling, stir continuously. Continue cooking and stirring until the compote thickens (5-10 minutes)â
- Stir in basil or chia seedsâ
- Optional: Sweeten with allulose if excessively tartâ
