WHOLE PESTO CHICKEN// easy spring meal for meal prep. My mother in law brought me a magazine this weekend with 100 chicken recipes... and there was one called “40 leaf basil chicken” which looked so yum, but basically required you to make a pesto to spread on the chicken. I am a pesto lover so I thought, why couldn’t I just grab the store pesto I love and use that?! I usually roast chicken over carrots and onions so this was a fun mix up, the onions and peppers were sooo caramelized and delish. I served it with a little quinoa and broccoli, so yum! A few tips: ✨ I’m sure this would be amazing with homemade pesto but that’s just not how I roll always. I recommend a pesto with an olive oil base! ✨ I let my chicken come to room temp and dried it and salted it prior to pesto ✨ I added a bit extra salt, pepper, red pepper flakes. I bet this would’ve been great with onion, garlic and lemon stuffed inside but honestly I was looking for easy. ✨ I roasted at 375 for an hr and fifteen minutes, until the internal temp was 165! #pcos #pcosconsciousqueens #pcosmealideas #lowcarbrecipes #bloodsugarbalance
