Another proud-as-punch purchase from another extraordinary vertically integrated company that needs almost no introduction; @forestgreencoffee Located on the slopes of an ancient volcano in the Tolima department sits the Bayter families El Vergel Estate farm. In 2016 the family planted 5,500 coffee plants on the steep slopes of the volcano, and after several years of experimentation and processing trials and errors, this Red Bourbon lot consistently is one of the most remarkable and dynamic coffees produced at @vergelestate Martha, along with her sons Shady & Elias, employ a team of women who pick, process and produce this coffee. This team has almost doubled in size since its inception and continues to receive the profits and resources from this female led and processed lot. After sorting, this 100% mature cherry lot is placed into sealed stainless steel tanks without oxygen for 60hrs. Afterwards, the cherries are intermittently dried on raised beds for 35 days before being pulped and finally mechanically dried. The result is an explosive coffee with notes of strawberry ice cream, mango, white grape, and Belgian milk chocolate. We purchased only a very small amount so expect this to be gone quickly!
