One pan lemon-artichoke chicken! You’ll need: 2 chicken breasts (or chicken cut of choice) Seasoning (I used @Dash Garlic & Herb) 3 cloves garlic 1 cup chicken bone broth 2 wedges laughing cow cheese 1/3 cup milk 1 cup diced artichoke hearts Capers (add to taste) 1 cup jasmine rice 3-4 tbsp olive oil 1 lemon Start by searing seasoned chicken breasts in olive oil on both sides. Set aside Deglaze the pan with chicken bone broth & add in minced garlic, let simmer for 1-2 mins before adding in laughing cow cheese, 1/2 lemon juiced, milk and rinsed jasmine rice. Once combined, add back in the chicken breasts. Cover and let simmer for 20 mins until rice is fully cooked and chicken reaches 165 internal temp. (Get a food thermometer if you’re unsure!) Add in the artichokes & capers for the last few mins so they don’t get soggy. Enjoy!!
